LUMPIA CLASS!

This is a "home" recipe.  Filipina have passed this recipe from mother to daughter, and families, so the measurements are not "exact".  They're just "guidelines".
"Season" to taste!

Ingredients list:
- 1 lb ground pork
- 1 large red onion
- 1 head of garlic
- 1/4 bundle of parsley
- 2 large carrots
- 1 egg
- Vegetable oil
- Sweet and spicy dipping sauce
- Lumpia Wrapper

(The lumpia wrapper and dipping sauce can be bought Sun Asian Market, 404 Santa Fe Dr.  The "Red Box" of lumpia wrappers gives you more wrappers, but you have to separate them.  The "Blue Box" gives you less wrappers, but they are separated, so you get individual wrappers, separated by plastic.  Same wrapper, your choice!)

Seasoning:
Ground pepper
Oyster sauce
Soy sauce 
Sesame oil
Grated Parmesan Cheese (Optional)

Preparing and mixing the Ingredients:
1) Peel the skin off the carrots, and grate them
2) Dice the onion (LOVE Onions? Add more!!)
3) Dice the garlic (LOVE Garlic? Add more!!)
4) Cut the leaves from the parsley and dice them
5) Mix all of this with the ground pork
6) Add the egg
7) Ground pepper to taste
8) Oyster sauce (maybe a spoonful or two)
9) Soy sauce (maybe a spoonful or two) 
10) Sesame oil (one spoonful)
11) Grated Parmesan Cheese (Optional)

Mix everything really well until the texture is "sticky". Then TASTE TEST!  Put a spoonful or two in the microwave for 30 seconds or a minute.  Taste, add seasoning to taste.

12) Cover and put in the fridge for 24 hours.

AFTER 24 hours.  Mix again, then wrap with a lumpia wrapper.  Seal the wrapper with a flour/water paste. Then fry in oil and enjoy, or freeze it until later.  Consider giving a bag or two away and bless your friends!
